What's for Dinner?

Fast Draft progress: Wrote 8 pages yesterday. Not my goal, exactly, but considering I felt like something that had been run over a few times, I'm pleased.

Anyhew, I made this chicken recipe last night for dinner. It's from last month's Cooking Light and man is it ever good. No, not good. DELICIOUS. My little girlie loved it too. I served it with warm pita bread.

Chicken Orzo Salad With Goat Cheese

Ingredients

1 1/4 cups uncooked orzo pasta
3 cups chopped grilled chicken breast strips grilled chicken breast strips (or use Tyson)
1 1/2 cups trimmed arugula
1 cup grape tomato, halved
1/2 cup chopped red bell pepper
1/4 cup chopped red onion
2 tablespoons chopped fresh basil
1 teaspoon chopped fresh oregano
2 tablespoons red wine vinegar
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
6 tablespoons crumbled goat cheese

Directions:
1 Cook pasta according to package directions, omitting salt and fat; drain well.
2 Combine pasta, chicken, and the next 6 ingredients (through oregano) in a large bowl; toss well.
3 Combine vinegar, oil, salt, and black pepper in a small bowl, stirring with a whisk.
4 Drizzle vinegar mixture over pasta mixture; toss well to coat. Sprinkle with cheese

I'm just sorry there isn't much left over for today's lunch.

You made me laugh about feeling like you had been run over. (Not funny I guess, but loved the wit.) I hope you feel better today.

I will try this recipe on my hubby when he gets home. It's too exotic for my boys. (Advice for new parents: NEVER introduce your kids to McDonald's.)

Ah, yes, Mickey Dees have been the downfall of many a child's tastebuds. LOL!

I used the box of Tyson's grilled cooked chicken strips and cut them up further to make it even easier on myself.
