This time, I'm not talking about stoning in the garden, or even flowers. When I say from the garden these days, I'm probably talking about zucchini. We already have tons. Along with yellow squash, cucumbers and beans! So yesterday, I took some of the overflow, blanched the veggies and froze them.
And since it was a bit cooler, I broke down, turned on the oven, and made two loaves of zucchini bread. I woke up to have a piece for breakfast, and discovered my son ate all about one slice of one of the loaves. LOL For those with gardens (and their own bounty of zucchini) here's the recipe:
3 cups whole wheat flour
1 cup oatmeal
2 tsp baking soda
3/4 cups oil
1 cup brown sugar
4 TB milk
4 eggs
1 cup (I tend to use a bit more) zucchini or carrots (I tend to put a carrot in with the zucchini...it makes for a very pretty loaf)
1/2 cup raisins
Mix it all together, put in two greased loaf pans and bake 40 minutes at 350 degrees.

Right after we brought Ethel Merman (our dog, in case you didn't know) home from the pound, she was very timid and unsure. She came from an abusive home and wasn't sure what was going to happen here. The first day I knew she'd finally figured out she was home, and there would be no abuse, was on a day when I made zucchini bread and left it on the counter to cool. Ethel ate both loaves.
Now, you might wonder why my dog being bad was a good sign. But I figured it was sort of like a child. When they're scared, they try to be good...it's invisible. But when they're more comfortable, when they trust you, they can be bad, because they know you'll love them anyway. Ethel's zucchini splurge showed that she trusted us, and knew we'd love her regardless.
And as sweet as that was, I try to be very careful when the zucchini bread cools these days...she still really likes it! LOL

As for Ethel, she's so much better, especially since we brought the puppy home! It's so sweet to see her let the puppy win their tug battles or wrestling matches.

Donna, Ethel's name is funnier if you know my real last name is Fuhrmann...Ethel Merman Fuhrmann. The puppy is Ella Fitzgerald! And no, I've never made zucchini chocolate cake, but I'd be open to the recipe! (hint, hint) We've been grilling lots of the zuc's and the yellow squash. Very good. And I tried panko bread crumbs yesterday and breaded a few, then fried them in olive oil..oh, my!

blanching and freezing
Friends of mine are truck drivers and will get cases of vegetables real cheap. We have onions, red potatoes, beans, yams, green peppers, corn(on cob and off), zucchini squash(yellow), squash, aspargrus, cherries. frozen and soups, stews,chilis... They even went and bought an upright freezer.

I took some of the cucumbers yesterday and made them into a salad. (The sauce is Miracle Whip, cider vinegar and sugar...just that and onions.) Wish I could freeze those!!

A couple of recipes
For cucumbers, my 2 summer favourites:
Equal amounts coarsely diced cucumber and tomato
1/2 of that amount of diced red onion
Put these three in a bowl and mix with Kraft Roasted Red Pepper and Parmesan dressing.
And Cucumber Dill salad:
Thinly sliced a cucumber, salt it and let it sit for 20 minutes. Drain off liquid.
Ack! I can't find the dressing recipe! Put out a BOLO! I know it has sour cream, vegetable oil, and dill. It is SO good.
Zucchini Chocolate Cake
2 1/2 cups flour
1/2 cup cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 tsp cinnamon
3/4 cup oil
1 cup brown sugar
1 cup white sugar
2 tsp vanilla
2 cups grated zucchini (peeled or unpeeled, your choice)
1/2 cup milk
3 eggs
Blend dry ingredients. In a separate bowl beat oil, sugar, eggs, add vanilla and zucchini. Add the dry ingredients to it, and milk. Bake in a greased bundt pan at 350 for an hour.

frozen onions
I just peel them, chop, bag freeze. Last year when we did them we chopped a little smaller so they were a little easier to break apart and we could take a handful out to like say make an omlete, fry a little for steak, great to have on hand for perogies. Only thing once frozen it's better to use them in something cooked. Warning house and freezer will smell like onions. so to make sure this smell doesn't get absorbed by my other foods in bigger freezer I have them in the freezer above fridge

I love frozen onions too!
I just dice them up and freeze them. Then just break off the amount you need. However, I grow shallots as they are so expensive to buy. In fall we harvest and dice up the shallots and really enjoy them all winter long.
I used to make zucchinni relish but somehow managed to lose the cookbook with all the recipies in it. You can also make meatloaf with Z in it, It turns out moister and you don't even notice Z. We also add diced Z to pizza and of course spaghetti sauce. It is such a versatile veggie.
Just love your dog's names Holly. I understand about steeling the Z-loaf making you happy, It is so great when animals finally trust you.

freezing vegetables
I just typed in freezing Vegetables in a google search and found a chart that listed the best way to freeze them and printed it out. I just did that with fruits too. When I worked in the kitchen of a nursing home we used to get bags of frozen diced onions, celery, carrots for soups and sauses

Kaelee, Oh, maybe next year we'll try shallots. Our new veggie this year was eggplant, and I have two coming in...hopefully eating one before I leave for San Francisco! And I'm glad you love the dogs' names. They're really quite sweet! Ethel has an occasional relapse, but is so much better than when we got her. And you should see her with my nieces. She guards them like crazy and adores them. It's so sweet.
And Krista, I'm really working at freezing more of the veggies from the garden this year...the internet is a great resource. And as I expand the garden, DavesGarden.com has been a great place for plant/tree info.

Am I blogging...
...with a bunch of good cooks here? H'm. I'm the odd ball out, I guess *sigh* It's a well known fact in my small town that I'm not a hot chick in the kitchen - unless you count burns and holes in my potholders. Oh, I'm a terrific eater, just not a good cook. Oh, well. Some have it...some don't.
Now if anyone should feel sorry for me, no need. I'm perfectly content with my lot in life. I'm an artist, writer, Brownie troop mom, outdoorsman (or outdoorswoman to be politically correct) and many other odd-ball things. Gourmet and even camp-cooking is just not in my genetic makeup. Okay, okay... yes, you can feel sorry for me.
Seriously, these are great sounding recipes, everyone. And I really like the story about Ethel, Holly! Love that's begat the hard way is usually the most worthy of all. Sounds like Ethel is one heck of a sweet rascal!

There are shades of Ethel in my October book, Once Upon a Thanksgiving. The kids in the book adopt a dog from the pound. And the dog we lost right before we got Ethel was a 200 lb Old English Mastiff. Winston was renamed Dudley, and starred in Night Calls. I tend to do a lot of pets. And kids. After all, they say to write what you know...and I do sooo know both! LOL
You can be sure I'll let you know if Ethel gets her own book.

Dogs and kids
We always had pets growing up, but in the city...well, I felt cooped up and didn't think it was fair to do that to a dog, too.
But now with the new house, we have promised a dog and we get her in just under 2 weeks!
She is a purebred but she wasn't working out with her litters. The breeders have had her spayed and needed a good home for her. She's a little older...nearly five, but she is SO gorgeous.
We went to see her on our way through New Brunswick, and fell in instant love.
I'd love to show a pic but I don't have it on a website anywhere. Is there a way to browse?

Parsnips .... and leeks ....
Holly for a different treat substitute shredded parships for your zuchinni/carrot in the loaf and cut back the sugar by 1/2 .....nobody will ever guess what you put in it and it's actually quite good! ..... parsnips are awesome cut in shoe string strips and deep fried like potatoes chips :)
we are vegetable growers in Ontario ... our chef crops are parsnip, carrots, celery, red onions, turnip, beets ... we used to grow leeks and I miss them ..... so now, I chop up the leeks and fill up ziplock freezer baggies ... leeks (cousin to an onion) is a milder taste and their sections fall apart very easily ... so when you reach in the baggie for a handful to add to soup, stews, omelets etc they automatically separate ..... I love them fried up with perogies or left over potatoes :) .... I much prefer to freeze the leeks than to freeze chopped onion, I find the onion loses it's texture whereas the leek is a winter hardy vegetable so it handles freezing very well
Cucumber salad .... like Donna I slice up the cucumber very thin and sprinkle with salt to pull out the water ... I let is sit for about 20 - 30 min and press the water out a few times .... for a dressing, I use equal parts sour cream & mayonaise ... fresh dill weed, freshly ground black pepper ... yum ..... alternately, I've used vinegar instead of the sour cream, just a dash over the sliced cucumbers, then add the mayo etc

Yes, that's a fave too, and I use either one, whichever one is open and in the fridge.
When i was in london last fall, I had the BEST spinach salad. Spinach, bacon, fresh parmesan, and avocado. I like to add a little tomato to it (sundried would be REALLY good come to think of it). The dressing was literally just a bottle of olive oil and a bottle of balsamic vinegar and you just drizzled some over. I make it for us a lot.

Katherine, I'll confess, I've never ate parsnips, but I'll try anything once...well, at least with food (well, non-meated food)! LOL I love leeks! I grew up in the country and the few wild in the woods behind the house! I love leek soup in the springtime! I love all your ideas. Next year I'll have to try and freeze some. Your Ethel is so funny, so are you now reserving one loaf of bread for her everytime you bake?
I understand perfectly regarding the 'bad' things kids/dogs do.
3 years ago, we adopted a cattle dog from the pound, at that time, very timid, hid in his crate, wouldn't go 'pee' for 1 whole day. Now, he follows my husband when he wants to go walking, put his toy on your lap when he wants to play but refuse to let you take the toy (playing tug of war), follow me or look for me when he wants his meal or cookies.
Thanks for the receipe also. I'd try it.

Orchid, Ethel is so funny. She and Ella are just now playing their version of keep away. Ella has the toy and ducks under the dining room table and chairs, but because Ethel's bigger, she can't get under. So Ella keeps the toy, while Ethel stalks her. Every now and then, for kicks and giggles, Ella nips at Ethel's toys. Watching them can amuse me for hours! LOL Oh, your dog sounds delightful, and so lucky to have found you! What's his name??

This is for winter or cool fall day
Oven roast your parsnips along with potatoes, carrots, sweet potatoes, leeks etc. We do a big batch and have leftovers for pan warming. Add any kind of meat in oven at same time. Just peel veggies and brush with olive oil and season to taste and roast. My Dh just uses his hands and gets them conditioned at same time.
I grow leeks as well and freeze them both chopped and whole. The chopped ones go in leek and cabbage soup and the whole ones get roasted.

I have three cats but I love dogs as well. Two of my cats came from the Calgary Humane Society and the third, our young male, was a stray on my sister's farm and is the biggest "chicken" ever.

His name is Angus
Okay, don't laugh, a cattle dog named Angus?! There's a story behind this too, here is:
We went to sign adoption papers, the foster parent had several cattle dogs, all came out to meet us, Rudy (not the one my son picked, that's one Nemo) attached himself to me while dh & ds were talking (about 30-45 minutes) to the foster mom. Nemo was just running around, very active, not a care of the world. So, we all went inside to sign papers, Rudy laid on my feet, so sad & adoring looking, at the last minute, we asked if we could picked him instead. Now, back to home, "Rudy, Rudy come here, have a cookie", no response. "Come here", immediately, he got out of the crate & came over. So, ds said he probably didn't like the name 'Rudy', so 'Angus Beef' came into ds's mind (his humour!), ds said 'Angus, come here', the dog went to him. No way, just coincidence. 'Rudy, come here', no response. Tried 'Angus' again, he came running over. Each one of us tested the 'name calling' a few times in different part of the house. He answered to 'Angus', so that's 'Angus' he'll be. What can I say, Angus picked his family & his name.
Honest, this a true story.

It's such a great tale. Sounds like Angus knows his own mind. We watch stock dog trails every year at the Calgary Stampede and yes I have seen an Angus herd sheep there. Also a Fly, a couple of Meggies and lots of other Scottish sounding names.

the case of the missing zucchini
Well I'm thoroughly jealous! I live in the Golden State, the land of rich soil and temperate weather, and I've got exactly zero zucchini. Oh sure, the plants are growing but they're just not making any veggies. Is it the water rationing? The blanket of smoke from the wildfires? The hostile tone to my voice when I berate my plants? No clue.

We're having our first eggplants tomorrow...making eggplant parm as the last meal I cook before heading to conference.

there Sweet potato soup is done. Also mananaged to use up two containers of squash by adding it in. Then blended it added a little sour cream and shedded cheese on top of test bowl and awesome

(Smecks – Mennonite word for “tastes good”)
HERBY ZUCCHINI TOMATO CASSEROLE
A wonderful late summer dish that you can stretch or diminish to fit your largest or smallest casserole. A great way to use those overgrown zucchinis.
l or 2 onions
2 tablespoons butter
Enough zucchini cut in 1/2-inch slices, to completely cover the bottom of your casserole
4 tomatoes cut in 1/2-inch slices
1 teaspoon salt
Pepper to taste
1 squashed garlic clove (optional)
1/2 teaspoon oregano
1 teaspoon basil
Topping:
1 cup breadcrumbs
1 cup grated cheddar
1 teaspoon blended herbs
Peel and slice an onion or two and cook long enough in the butter to soften it. Place the zucchini in the bottom of your casserole; put a slice of tomato on each slice of zucchini sprinkle with softened onion, seasonings, and herbs. Put more zucchini slices, tomato slices, and well-seasoned onions until you have filled up the casserole. Cover and bake in a 300°F oven for about 20 minutes (we do this 35 minutes – our preference), until the zucchini is slightly tender. Take off the cover and bake another 10 minutes till some of the liquid has evaporated. Mix the cheese with the bread crumbs and herbs, spread them over the top and bake about 5 minutes longer until the cheese melts and the crumbs are a tempting golden brown. This is great with a tossed salad, or baked potatoes and country sausage or pork chops, lamb cutlets- any meat without gravy.
My comments: I make this in the fall when I have lots of tomatoes and zucchini. I usually make four corning ware casseroles full at the same time (use assembly line). I don’t put the onion or garlic in the dish as it is labor intensive when I am just trying to use up T and Z. I sprinkle with garlic powder instead. When the dish is bubbling I take 3 out of the oven and put the topping on only one dish and put it back into the oven. The other 3 dishes get cooled. Then they get put into the freezer dish and all. When they are frozen, I take them out and set them in hot water until I can pop the contents out. Frozen T and Z Popsicle which I then put into a freezer bag. These can be popped back into the dish and cooked as a casserole or used as a base for a vegetable tomato sauce or add them to homemade soup in the winter. If I do either of the last two I chop the Z smaller.
