Happy Memorial Day! I hope your day is filled with thoughts of those who have passed, and filled with family and friends who are still here!
We're going to my daughter's for a picnic today. You realize you've moved to a new stage in your relationship with your kids when they invite you to their homes for holidays! Gotta confess, it's nice. I woke up, made chocolate-peanut butter pudding dessert, took the dogs for a walk and...well, my day is mine. I'm going to work for a bit until the youngest gets up, then maybe do a movie of or something fun before the picnic.
In case anyone needs a fast dessert, the chocolate-peanut better thing is sooo easy. I don't really measure anything...I make the layers to taste, but these are pretty close approximate amounts...but do taste yours! (Checking it is a great excuse to sneak tastes!)
Crush half a bag of Oreos, and line the bottom of a trifle bowl (or you can use a 9X13 pan).
Take one package of cream cheese, about a cup and a half of peanut butter and a cup of powdered sugar beat. Fold in a little more than a third of the giant tubs of Cool Whip. Add to pan/bowl.
Crush and add 1/4 of the package of Oreos.
Take two boxes of instant chocolate pudding. Add only three cups (instead of four) of milk, beat. Fold in another 1/3 of Cool Whip. Add to pan/bowl.
One box of instant vanilla pudding, 1 1/2 cups of milk (not two). Beat. Fold in the last 1/3 of Cool Whip. Add to the top of chocolate pudding.
Top the dessert with the remaining 1/4 of the Oreos...crushed.
Refrigerate for at least two hours.
You can cut the calories a lot by using low fat cream cheese, skim milk and sugar free puddings. Doesn't matter...this is delicious and very light!

Hope your day and picnic are very special. We had our picnic Saturday and are just relaxing today. I will fix dh's favorite-cheeseburgers,baked beans,potato salad,cake and ice cream. Figure is least I can do as he served his 20 years in the Army-even was in Desert Storm.
