Summer Recipes Anyone?

Summer has officially arrived, which for me means the July release of my first Blaze anthology, What I Did on Summer Vacation, with fellow writers Thea Devine and Debbi Rawlins. My contribution is "No Reservations" about a young woman who plans to spend her thirtieth birthday on Cape Cod, but finds out the hunky owner of the cottage she rented didn't plan on company. Needless to say, they'll add a little more heat to your summer, and to go along with hot summer books, I thought I'd share one of my absolute favorite summer recipes -- a salad that is so good you'll want it all the time. :)

Strawberry/Romaine Salad with Yogurt Dressing

1 lb boneless chicken breast, grilled and sliced about 1/8 inch.

2 Tbsp sugar

3 Tbsp white vinegar

1/3 cup minced red onion

1/4 cup light mayo

3/4 cup plain nonfat yogurt (plain, not vanilla)

1 pkg or head romaine

1 green apple or 1/2 cantelope or honeydew, chopped into 1" squares (with apples, rinse chopped pieces in some water with lemon juice so they don't brown)

1 qt strawberries rinsed, hulled, and sliced or quartered

Rinse lettuce, and place on 2-3 dinner plates or 4-5 salad plates. Place fruit over lettuce and then the sliced chicken on top.

In a separate bowl, combine yogurt, mayo, sugar, vinegar, and onions.

Spoon dressing over salad to taste (I like a lot -- it's healthy, unlike some salad dressings, and really tastes great, trust me), and enjoy.

**Dressing can easily be increased for more salads. Don't make ahead of time, as it will get watery.

Your recipe sounds delicious, Sam!  I think I tasted a variation of this salad at a cooking tools party.  I wished afterward that I'd gotten the recipe.  Thanks for posting!

This salad is a favorite -- we eat it all year round to be honest, because it's one of the few things that you can a huge serving and not kill your diet. ;) But it's especially yummy in summer...

I saw our local strawberries have just come into the market, but they look really sad, which is terrible. The weather has just not been kind this year...  I hear corn is suffering, too, from the floods...

Strawberries

We grew our own strawberries one year and the flavor/sweetness was just phenomenal.  Maybe I'll search out some organic strawberries and see if they stack up.  And I already have boneless chicken breasts in the freezer....Cool
