Greek Style Scampi
Well, as much as I love hearing about new books, I love hearing about new recipes. Here's one I made a week ago for the first time: Greek Style Scampi. I got it from Cooking Light, so it's healthy AND delicious. My hubby even suggested I make this for when company comes over.
Greek Style Scampi
6 oz uncooked angel hair pasta
1 tsp olive oil
1/2 cup chopped green bell pepper
2 tsp minced garlic
1 (14.5oz) can diced tomatoes w/ basil, garlic, and oregano-undrained
1/8 tsp black pepper
1 lb peeled,deveined shrimp
1/8 tsp red pepper
6 TBsp (1 1/2 oz) crumbled feta cheese
1) Cook pasta--drain and keep warm
2)Heat oil in large skillet over med-high heat. Add bell pepper; saute 1 min. Add garlic and tomatoes; cook 1 min. Add black pepper and shrimp; cover and cook 3 min or until shrimp are done. Stir in red pepper; remove from heat. Place 1 cup pasta on each plate. Top each serving with shrimp mixture and sprinkle with feta cheese.

Halibut
Halibut Weaver
"Baked halibut is smothered in cheese and dill in this wonderful dish."
INGREDIENTS:
2 pounds halibut
1 cup mayonnaise
1 cup shredded Cheddar
cheese
1 cup shredded Monterey Jack
cheese
1 tablespoon dried dill weed
1 teaspoon mustard powder
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place halibut in a baking dish. In a medium bowl, mix together mayonnaise, shredded Cheddar cheese, shredded Jack cheese, dill, and mustard. Spread cheese mixture over halibut. Sprinkle more dill on top if you like.
3. Bake in preheated oven for 30 minutes, or until fish is done, and cheese is golden brown and bubbly.

I also added a large clove of minced garlic to the above cheese mixture. We all loved this recipe.
