Seasoned Roasted Potatoes

I like to BBQ year round (yes IN the snow too!), and often I prepare a quick and simple meal that includes a salad and these roasted potatoes as a tasty side dish.

  • 3 - 4 Yukon Gold or other potatoes cubed (skins on)
  • 1 - 2 tablespoons of Balsamic vinegar or lemon juice
  • 1 - 2 tablespoons of olive oil
  • 1/4 or to taste teaspoon fresh ground black pepper
  • 1 tablespoon or to taste Club House La Grille vegetable seasoning mix.
  • 1 - 2 teaspoons of minced garlic or more to taste

Preheat oven to 375*. Toss the potatoes with seasonings and place into an oven proof casserole dish and roast/bake, turning a couple of times, for approximately 45 minutes or until golden brown.

Aunt Myrna's Potatos

  • 12 medium sized potatos, cooked in water and left in the fridge overnight.
  • 2 tbsp butter
  • 1 pint of cream
  • 2 tsp salt
  • Durkee Fried Onions 

Melt butter in 9x12 baking dish.  Grate potatos into the dish. Sprinkle the salt over them (DO NOT SKIMP ON THE SALT). Pour cream over the potatos and bake in over for 45 minutes at 350° F.   Take pan out of oven and sprinkle the onions over the top and put back in the oven for 10 minutes.

This is very rich and VERY GOOD.

Both recipes sound great Jayne & FF

I will have to try both as they sound delicious. Here is one from the Betty Crocker Low-fat, Low-cholesterol Cooking Today book.

HARVEST ROASTED VEGETABLES (4 servings)

1 medium green bell pepper, cut into 1-inch pieces        
1 medium onion, cut into 1/4-inch wedges                     
1 medium tomato, cut into 1/4-inch pieces                     
1 medium zucchini, cut into 1-inch pieces                 
Olive oil-flavored cooking spray                                  
1/2 teaspoon salt                                                             

Set oven control to broil. Cover cookie sheet with aluminum foil; spray with cooking spray. Place vegatables in single layer on cookie sheet. Spray vegetables with cooking spray. Sprinkle with 1/4 teaspoon of the salt.

Broil with tops 4-inces from heat about 12 minutes, stirring occasionally, until vegetables are tender. Sprinkle with remaining 1/4 teaspoon salt.

This recipe is delicious and very easy. Plus cleanup is a snap.  Enjoy.

quick fix

If I am pressed for time I just cook some spaghetti noodles, drain add butter and parmason cheese......actually one the family really likes especially with chicken breast that have been pan fried with salsa added at the last few minutes......

we do potatoes in the oven that have been cubed with the skin on and then add some butter and a package of ranch dressing powder....

those are the 2 that came to mind.....I have also been know to just follow the directions on the package...like HJ.

Quick Noodles MarinaraI

Quick Noodles Marinara

I boil Rotini. While it's cooking I mix a  can of tomato sauce,  tbsp or 2 of olive oil, a clove of minced garlic, and a small handful of italian seasoning (tbsp or 2)

Drain the noodles, return them to the pot, pour the sauce over it and stir.

The amounts vary, depending on how many people I'm cooking for. It should turn out to be a light coating of sauce.
