How do you like to cook yours? My favourite is to marinate fillets in lemon juice, olive oil, garlic and dill, and grill it on the barbeque on some foil. My girls gobble it up... a big feat in a family not overly fond of fishy things. I just saw a recipe for orange glazed salmon that I'd like to try too.

Holy Mackeral! What a catch!
I know it's salmon, Loreth, but 'holy salmon' just doesn't have the same zing. My dad would be salivating all over the place if he could see this pic. Not only is he an avid fisherman, but he loves, loves, LOVES eating his catch. Do you mind if I ask where this fish was caught? I'm guessing it's somewhere along the Canadian coast....
BTW, Donna, can I fly up for dinner at your new house someday? LOL From the sounds of your recipes I keep finding here and there on your blogs, it'd be well worth the flight!

I want to go to Donna's house, too!! I'm going to try your recipe on some of the fillets, Donna -- the marinating sounds divine.
Usually when it's so fresh, we also do it on the BBQ, with foil. I seal the foil loosely if the fillet is thick, then open it up for the rest of the cooking (so it doesnt dry out). And I also like plain lemon juice and cracked salt ... sometimes with olive oil, and herbs, or sometimes with butter. But I imagine the marinating adds so much more.
It's great under the oven grill, done pretty much the same way. And last night I did some fillets with garlic and fresh basil and oreganum and lime plus olive oil, salt etc, and a dash of butter -- in a cast iron frying pan. The butter sort of carmelized with the limejuice -- very good!!

LOL, Amanda. Yeah, holy salmon doesnt quite cut it
YOu guessed right, this Chinook was caught off Tofino, on the west coast of Vancouver Island. I guess it would be called a King Salmon south of the 49th, and in some parts on the Pacific Northwest I gather its called Spring Salmon. By whatever name it goes, it truly is a great fish to eat.
Where does your dad like to fish, If I might ask?
